Compile and critique safety and sanitation procedures related to handling, preparing, storing, and serving food from industry-approved technical manuals and government fact sheets. Identify and review common lab safety procedures.

  • Teacher will review with students kitchen lab and food safety information covered in the last course
  • Food Sanitation and Bacterium Notes – Part 1
    • Teacher will guide students through more in-depth information regarding food sanitation and bacterium

    • Teacher will review process for Bell Ringers on Teams
    • What is the difference between helpful and harmful bacteria?
  • Food Sanitation and Bacterium Notes – Part 2
    • Begin at Types of Food Borne Contamination
  • America’s Most Unwanted Assignment
    • Students will conduct research over an individual food borne bacterium, and prepare a summary for the class by answering listed questions
    • Students will record all sources used to answer questions
    • Students will also create a 3D model or graphic illustration

    • What is one interesting thing that you have learned so far in your bacterium research?

    • Students will finish up assignment

    • Have you ever heard of anyone having the bacterium that you researched? What were their symptoms? How long did it take to clear up?
  • America’s Most Unwanted
    • Students will present their findings to the class
  • Bread Bacteria Testing
    • Using a slice of bread, TLW choose a place in the school the swab using the bread (door handles, sink knobs, water fountain, etc)
    • The bread will then be placed in a Ziplock bag and monitored over the next several weeks to monitor and track bacterial growth

    • Of the bread samples taken yesterday, which do you predict will yield the most bacterial growth? Why?

    • Students will be given a study guide in which they will use their notes to complete

    • What is one area in which you struggle to stay safe and sanitary in the kitchen? Why?
  • Food Sanitation and Bacterium Exam Study Time
  • Food Sanitation and Bacterium Exam
    • Students will submit to an exam in which they will need to make a 100, per state requirements
  • Food Sanitation and Bacterium Exam Retakes
    • Any student who did not make a 100 the first time will retake the exam
